St. Lucia's Anse Chastanet Resort Debuts Total Vegan Dining

The chefs at Saint Lucia's Anse Chastanet resort have created a new menu that serves entirely vegan cuisine.

The resort transformed the menu at the Emeralds restaurant from vegetarian to 100% vegan, so no animals or animal bi-products such as milk and eggs are used in the cuisine.

"We saw an increasing demand for vegan meals from our guests, so we thought why not develop this concept and make it part of our dining experience," explained Karolin Troubetzkoy, Executive Director of Marketing and Operations of the resort.

Choices on the menu include Crispy Cauliflower Accras with lime, scallion, and Saint Lucian mango chutney; and Bread Fruit Gnocchi with tomato, lemon thyme and chadon beni pesto.

James Beard award winner and consulting chef Allen Susser worked in collaboration with the vegan chef at the resort, Frank Faucher, to create the menu. As an added event, Emeralds plans to regularly host international vegan chefs.

Much of the fresh produce used in the restaurant is harvested from the resort's organic farm, also named Emeralds. Guests can visit the farm for a tour, accompanied by both farmer and chef and enjoy a farm-to-table cooking class using freshly harvested fruits and vegetables.

Visitors travelling between 15JUL and 15OCT, 2019 can take advantage of free night promotions in various room categories. There is also the Summer Escape Sale, which offers 35% off room rates with an all-inclusive meal plan.
